Homemade Crepes with Pumpkin Syrup {recipe}

Nothing says Fall like Pumpkin and this week I experimented and scored with a pumpkin breakfast that I just had to share. I love that this recipe for Homemade Crepes with Pumpkin Syrup is so darn easy. I’ve taken my tried and true Crepe Recipe, substituted International Delight Pumpkin Pie Spice creamer for part of the milk to add pumpkin flavor the the crepes, and then made a homemade pumpkin syrup to top the yummy crepes. The pumpkin syrup is on the very thick side, so it’s more like a compote, perfect as a filling for the crepes and hearty enough for any Fall breakfast. So yummy!

Pumpkin Crepe Recipe

  • 2 eggs
  • 1/2 water
  • 1 cup milk
  • 1/2 cup International Delight Pumpkin Pie Spice Creamer
  • 3 TBS butter or oil (not olive oil)
  • 1/2 tsp salt
  • 1 cup flour

Add all ingredients to a blender. Make sure all ingredients are incorporated and then cook individual crepes on a griddle.

Homemade Pumpkin Syrup Recipe

Pumpkin Syrup:

  • 1 cup pure pumpkin puree
  • 1 cup brown sugar
  • 1/2 tsp vanilla
  • 1 cup water

Mix all of ingredients together in sauce pan. Bring to a boil over medium heat. Reduce heat to low and allow mixture to reduce for about 20 minutes being mindful that it doesn’t burn. Use as a topping for crepes, pancakes or whatever else you can think of! Cool completely before storing in the refrigerator.
