We love some avocados in these parts. Lucky for us, we have access to them year round. We eat avocado with everything we can think of. On turkey sandwiches, as guacamole, by themselves, in soup, and one of our favorite ways, on eggs. Avocado’s are a great source of naturally good fat (75% of the fat in an avocado is unsaturated), so it’s just an added bonus that they taste great, have a wonderful color and texture and enhance food in such an amazing way.

Avocado, Cherry Tomato and Egg White Omelet Recipe
TIP: The first thing you’ll want to do before my making this recipe is know how to pick an avocado. If the Haas avocado isn’t ripe enough or is over ripe, it won’t be good, so to really benefit from this MY WAY to Love One Today™ recipe, use this quick How to Pick Avocados visual. It’ll make a world of difference! Did I mention that avocados are nutrient-dense, cholesterol-free, sodium-free, and have less than 1 gram of sugar per 1 oz. serving?
Avocado, Cherry Tomato and Egg White Omelet Ingredients
- 4 egg whites
- 1 clove of garlic
- handful of cherry tomatoes
- Haas avocado
- green onion
- 2 mushrooms
- 1 tsp. vinegar
- 2 tsp. olive oil
- Salt and pepper to taste
Directions {step-by-step}
Note: Omelet recipe is to make individual 4 egg white omelets.
Step 1: Chop onions and mushrooms. Cut cherry tomatoes in half. Cut avocado into bite sized pieces. Sauté mushrooms and onions. Peel and cut in half one clove of garlic and secure of fork (you’ll use this to stir in eggs to add garlic flavor).
Step 2: Crack eggs and separate yolks from egg whites. Whisk egg whites and then stir garlic in egg whites with fork to infuse with flavor. Season with salt and pepper. Pour egg whites into sauté pan. Cook omelet.
Step 3: Add sautéed mushrooms to omelet and plate. (you can use any vegetables you’d like, actually!) Top with Avocado and Cherry Tomato Garnish.
Avocado and Cherry Tomato Garnish: Mix avocado, cherry tomatos and 1 tsp vinegar to 2 tsp olive oil. Salt and pepper to taste.
