Now that my kids are back in school, their appetites are on over-drive. They are expending a lot more energy at school than they did at home over the summer, and since they want to eat right when they get home, I’ve had to get a bit more creative with healthy after school snacks so that they don’t eat empty calories. This week, as part of my challenge as a “Chief Waffle Officer” I came up with an Eggo-licious After School Snack recipe that my kids loved and that got my seal of approval, too. Fruit Kabobs made with Eggo® Mini Waffles dipped in Strawberry Yogurt Fruit Dip hit the spot on a hot after-school afternoon, and were healthy and EASY to boot! Eggo-licious After School Treat Ingredients
For Fruit Kabobs:
- 1 box Eggo® Homestyle Mini Waffles
- Blueberries
- Raspberries
- Strawberries
- Grapes
- Kabob Sticks {tip: soak in water prior to assembling so that you don’t get slivers in your food}
For Yogurt Dip
- 4 oz. strawberry yogurt
- 1/8 cup powdered sugar
- 1/2 heavy whipping cream
Directions {Step-by-Step}
Fruit Kabobs
Step 1: Toast Eggo® Homestyle Mini Waffles.
Step 2: Wash fruit. Take stems off strawberries and grapes and put in easy assembly location.
Step 3: Assemble kabobs. Alternate waffles and fruit until entire kabob stick is full.
Strawberry Yogurt Fruit Dip
Step 1: Pour heavy whipping cream into mixer and beat on high until stiff peaks form. Add powdered sugar and yogurt and mix together.
Step 2: Serve with fruit kabobs.
Step 3: ENJOY!!!
